Jylia's Wild Boar Pot Pie

Ingredients:

  1. 5 pounds chopped wild boar

  2. 2 large onions, chopped

  3. 7 potatoes, cubed

  4. 7 teaspoons salt

  5. 2 teaspoons pepper

  6. 1 teaspoon each of the following:

  7. allspice, cloves, thyme, sage, cinnamon

Directions:

  1. Cover meat with water in large pot

  2. add all spices and simmer gently for approximately 3 hours or until meat looks "juicy".

  3. Add cubed potatoes and cook 1 more hour.

  4. Remove from heat and chill (don't freeze) overnight.

The next day, skim fat off top, and fill pie crusts with mixture. Makes 7 pies.

   Jypsie's Rice & Beans

Ingredients

  1. 2 packets of Sazon*

  2. 1 1/2 c. of Sofrito*

  3. 1 tsp of Adobo*

  4. 1 pkg of Kielbasa+

  5. 1 can of Goya pink beans#

  6. Vegetable Oil

  7. 2c. of Goya rice

  8. 1 3/4c. water

Procedure

  1. In a large Pot, add Oil just enough to cover the bottom. Turn stove on to medium
  2. Slice Kielbasa into cubes or disks (any size you wish) and add to pot (stirring meat occasionally)
  3. After about 5 minutes, add pink beans (stirring occasionally)
  4. Add 1 cup of sofrito (if you like it spicy, add another 1/2 cup)
  5. Add packets of Sazon and stir.
  6. Let sit for 5 minutes (stir occasionally)
  7. Add rice and water simultaneously(water should be just above the level of rice).
  8. Wait til it comes to a boil, cover with lid, turn on low.
  9. Let cook for 25 minutes - check the pot now and then to be sure you have enough water but do NOT stir.
  10. When done, stir with large fork to mix the rice and meat.
  • Notes:

  • *can be found in the ethnic section of the supermarket.

  • +You can substitute Kielbasa for Salami, pepperoni, ham, pork or linguica

  • *Adobo is a great seasoning you can use on nearly anything (meats, potatoes etc). It's a great salt substitue.

  • #Pink beans can also be substituted for Black eyed peas

  • Add Ketchup, hot crushed pepper or Italian dressing for an extra zippy flavor (personally i don't like it with ketchup as others do but Italian dressing is a delicious addition)

  • Recipe cooks better in a heavy aluminum pot. They can be found in any spanish store or professional cooking stores.
